We sell Devon clotted cream fudge across the county. Our guests love to take it home for friends and family, but… it’s easy-peasy to make your own at home!
Great for a gift, or for a nibble next to a roaring fire, or even for satisfying your craving whilst sitting on a Devon beach with the wind whipping your hair.
Use our fresh Devon clotted cream for best results. Well, we would say that wouldn’t we? But, always use local where you can!
- Knob of butter, used for greasing
- 275g caster sugar
- 100g golden syrup
- 225g Devon clotted cream
- ½ tsp vanilla extract
- 55g chopped dark chocolate
- 2 tbsp double cream
- 1 tbsp milk
Start making your Devon Clotted Cream Fudge by greasing a 20cm/8in square tin and setting aside.
Next, place all the fudge ingredients in a large heavy-based saucepan and gently. stir until the sugar dissolves. Bring the mixture to boil, cover and boil for another 2-3 minutes. Remove lid & continue to boil until the mixture reaches 115 degrees C on your sugar thermometer.
Pour the hot fudge mixture into a heatproof mixing bowl, take care as the mixture will be very hot, leave until cooled slightly. Whisk the mixture until the sugar crystallises – e.g. it should start to appear a grainier in texture and turn from glossy to matte.
Slide the mixture into your prepared, greased tin and put aside for 30 minutes, or until the fudge has set slightly.
For the drizzle: heat the chocolate gently, with the cream and milk in a small heavy-based pan, stirring frequently until the mixture appears smooth and creamy. Drizzle over the fudge, nice and easy.
Score the top of the fudge with the tip of a knife to form squares, then leave to set completely before eating.
